Vitamin C (ascorbic acid)

What is it? Vitamin C has a long and interesting story that dates back to the 16th century. At a time when the disease scurvy was rampant, French explorer Jacques Cartier began giving those afflicted by the disease shots from an evergreen and noticed their health was improved. Two hundred years later, British physician James Lind noted that adding citrus fruits to one’s diet improved scurvy. But it wasn’t until 1932 that the vitamin that cured scurvy was isolated and today is known as Vitamin C. Humans are among the few species that cannot manufacture this vitamin. This important antioxidant helps in the formation of collagen, an integral part of the skin, bone, eyes, teeth, tendons and other tissues. Vitamin C is also important in the formation of the adrenal stress hormones and is necessary for the absorption of iron.
